Easy No Boil Lasagna

Ever since my post on the no boil Mac & Cheese this week, I had a ton of

messages regarding my lasagna recipe. I did not realize I had never posted it. Just my low carb lasagna.

I realized a long time ago with the lasagna, that you don't need to boil the noodles. And yes, you don't need to buy the expensive, no boil noodles. Purchase whatever noodles you normally buy. The funny thing is now, on most boxes, it says on the box that you don't need to boil them. They just don't advertise it, so they can charge more for selling the ones that do advertise it.

The biggest misconception about lasagna, is that it takes forever to make. It takes about 15 minutes total, and usually makes 3-4 meals for lunch and dinner the next day leftovers. Which means no cooking the next day. If you are making it...go ahead and make 2!

As in most of my recipes, with my lasagna, I try and add nutrition wherever I can. So I use the wheat lasagna noodles instead of white. Don't forget BOGO works for the wheat also!! I always keep a bag, not box, of chopped frozen spinach in my freezer. Add a couple handfuls, wherever you can, to almost any dish and you have instant vegetables and nutrition. Usually, when most people eat it they don't even know it is spinach, they think it is just chopped herbs :)

Whatever your lasagna recipe is, you can still stop boiling those noodles! Just cover it with foil bake for 45 minutes, uncover, and bake another 10-15 minutes. And go ahead, keep your normal recipe, just now try and add some nutrition by simply, changing those noodles and adding a veggie :)

You can put this in the crockpot to! Yep just do the same steps and cook on low for 6hrs :)

2 lb Ground Turkey
1 Package of Wheat Lasagna Noodles
1 24oz Container Cottage Cheese or Ricotta Cheese
1 Jar Favorite Spaghetti Sauce
2 Cups frozen chopped Spinach
4 oz Sliced Mushrooms
1 Egg
1/2 Cup Shaker Parmesan Cheese
1 tsp Chopped Garlic or Garlic Powder
1 Tbsp Basil
2 16oz Packages shredded Mozzarella Cheese

  • Preheat oven to 350°
  • Or Crockpot Low for 6hrs
  • In a skillet brown your ground turkey, drain any liquid
  • Pour in your sauce, frozen spinach (no need to thaw), and mushrooms, mix well
  • In a large bowl, combine cottage cheese, egg, Parmesan, garlic, basil, mix well
  • In a large casserole dish layer:
  • Spoon full of sauce on bottom
  • 3-4 noodles
  • 1/2 ricotta mixture
  • 1/2 sauce mixture
  • 1/2 Mozzarella Cheese
  • Repeat
  • End with remaining Mozzarella Cheese on top
  • Cover with foil bake for 45 minutes
  • Uncover and bake additional 10-15minutes until cheese start to brown
