No Boil Macaroni & Cheese
Last night, I had an experiment, my father in law thought would work. I always
make my lasagna by not boiling the noodles, and he thought it would work for macaroni and cheese too. Guess what...it did...who knew :)
This is my normal recipe for macaroni and cheese. I just added a little more liquid to be on the safe side, covered it the first 45 min with foil, like I do my lasagna. It turned out delicious.
Usually, everyone has their own famous macaroni and cheese recipe. If you do, just add 1/2 c more liquid and cover with foil. Try it and let me know how it goes for you. Enjoy!
2 Cups Uncooked Wheat Noodles (Any Kind)
1 Cup Cottage Cheese
1 Cup Milk
1/2 Cup Water
3 Cups Shredded Sharp Cheddar Cheese
2 Tbsp Butter
1/2 tsp black Pepper
1/2 tsp salt
2 Eggs

1 Cup Cottage Cheese
1 Cup Milk
1/2 Cup Water
3 Cups Shredded Sharp Cheddar Cheese
2 Tbsp Butter
1/2 tsp black Pepper
1/2 tsp salt
2 Eggs
- Preheat oven to 375°
- Spray a 2qt Casserole dish with spray oil
- In a large bowl, beat with a hand mixer, Cottage Cheese, Milk, Water, Eggs, Salt & Pepper until creamy
- Stir in 2 1/2 Cups of Cheddar Cheese
- Stir in uncooked noodles
- Pour into casserole dish
- Top with remaining cheddar cheese
- Cut up your into butter, place chunks on top of cheese
- Cover with foil bake for 45 min
- Uncover and continue baking an additional 45 min until noodles are tender and starts to brown
