Ashley's Artichoke Dip
This is my friend Ashley's delicious Artichoke Dip recipe. It is not only a great low carb recipe, but easy, and inexpensive. This makes a great appetizer that everyone will love. She also suggests adding in Spinach as a variation to make a spinach artichoke dip. Thanks Ashley for sharing this great recipe. 1/3 Cup Mayonnaise
1-8 oz Pkg Cream Cheese-Softened
1/4 tsp Garlic Salt
Dash chili powder
2 Cups-Shredded Cheddar or Jack Cheese
1-14 oz can Artichoke Hearts, drained, and coarsely chopped
1/3 Cup Mayonnaise
1-8 oz Pkg Cream Cheese-Softened

2 Cups-Shredded Cheddar or Jack Cheese
1-14 oz can Artichoke Hearts, drained, and coarsely chopped
- Heat oven to 375°
- In large bowl, beat mayonnaise, cream cheese, garlic salt and chili powder on medium speed, scraping bowl often, until smooth
- By hand, stir in 1 Cup of Cheese (reserving 1 cup for top) and Artichoke Hearts
- Spread Artichoke mixture in 9 inch pie pan or baking dish
- Sprinkle top with remaining 1 Cup of cheese
- Bake for 15-20 minutes or until cheese melts
- Serve with Tortilla chips or Crackers, for a Low Carb variation serve with Celery, or Raw Vegetables.
