Crispy Baked Chicken


I love dark meat, and chicken on the bone. Josh does not. So I make this when he is not in town. It is so yummy!

I watch for chicken to be on sale. Either whole chicken cut up, or I like the thigh and drumstick portions. You can usually get 4-6 Servings out of one pack for $2.00. And then freeze it for a day to myself :)


The key here is using spices, whatever you really like, and letting it cook until it is brown and crispy. Enjoy!

Any kind of cut up chicken pieces

1/4 Cup Olive Oil

1 Tbsp of Diced Rosemary

1 Tbsp of Seasoned Salt

1 Tbsp of Black Pepper

1 Tbsp of Basil

1 Tbsp of Ground Cumin

1 Tbsp of Paprika

  • Preheat oven to 425°
  • Take chicken and remove any large pieces of fat or chunks of skin with knife. (I like the skin on the top part so I leave it. But, you can take it all off, but not necessary)
  • Place chicken in large casserole dish skin side up
  • Drizzle olive oil over all pieces
  • Drizzle all of spices evenly over chicken pieces
  • Place into oven and bake for approximately 1 hr. (I cook this chicken until it has REALLY crispy skin)
Serve with either, Acorn Squash, Red Potato Fries, (If you do the fries, put them in oven to start 1st, then add chicken.) Or Roasted Brussels Sprouts.
