Crispy Baked Chicken
I love dark meat, and chicken on the bone. Josh does not. So I make this when he is not in town. It is so yummy!
I watch for chicken to be on sale. Either whole chicken cut up, or I like the thigh and drumstick portions. You can usually get 4-6 Servings out of one pack for $2.00. And then freeze it for a day to myself :)
The key here is using spices, whatever you really like, and letting it cook until it is brown and crispy. Enjoy!

Any kind of cut up chicken pieces
1/4 Cup Olive Oil
1 Tbsp of Diced Rosemary
1 Tbsp of Seasoned Salt
1 Tbsp of Black Pepper
1 Tbsp of Basil
1 Tbsp of Ground Cumin
1 Tbsp of Paprika
- Preheat oven to 425°
- Take chicken and remove any large pieces of fat or chunks of skin with knife. (I like the skin on the top part so I leave it. But, you can take it all off, but not necessary)
- Place chicken in large casserole dish skin side up
- Drizzle olive oil over all pieces
- Drizzle all of spices evenly over chicken pieces
- Place into oven and bake for approximately 1 hr. (I cook this chicken until it has REALLY crispy skin)
