Ashley's Artichoke Dip

This is my friend Ashley's delicious Artichoke Dip recipe. It is not only a great low carb recipe, but easy, and inexpensive. This makes a great appetizer that everyone will love. She also suggests adding in Spinach as a variation to make a spinach artichoke dip. Thanks Ashley for sharing this great recipe. 1/3 Cup Mayonnaise
1-8 oz
Pkg Cream Cheese-Softened
1/4 tsp Garlic Salt

Dash chili powder

2 Cups-Shredded Cheddar or Jack Cheese
1-14 oz can Artichoke Hearts, drained, and coarsely chopped
  • Heat oven to 375°
  • In large bowl, beat mayonnaise, cream cheese, garlic salt and chili powder on medium speed, scraping bowl often, until smooth
  • By hand, stir in 1 Cup of Cheese (reserving 1 cup for top) and Artichoke Hearts
  • Spread Artichoke mixture in 9 inch pie pan or baking dish
  • Sprinkle top with remaining 1 Cup of cheese
  • Bake for 15-20 minutes or until cheese melts
  • Serve with Tortilla chips or Crackers, for a Low Carb variation serve with Celery, or Raw Vegetables.
*Variation: You can take 1 box of frozen spinach, thaw it, completely remove all of the water, stir into dip, to make a spinach artichoke dip.
