Beer Crockpot Chicken
Right now the extent of my cooking is in the crockpot. As many of you are
finding in life, time is an issue when it comes to cooking, and once you use your crockpot you never go back!
My friend Janna the other night raved about the pulled pork recipe that I have using a can of beer in the crockpot. So she wanted to give it a try using a whole chicken. I was interested in seeing her results and she loved it. So I had to give it a try and delicious, inexpensive, and easy. Doesn't get much better then that!
She used a whole chicken. My husband doesn't like chicken on the bone so I used breasts and then shredded the chicken into pieces and served with rice and black beans. You can use any kind you like. Cut up pieces, thighs, legs. Whatever you have. It will just fall off the bone!
You can play around with your seasonings. These are just a suggestion of what I tried and had on hand. Also, she used a fresh chicken and I used frozen breasts. She cooked on low all day and said it was moist and fell apart. I cooked mine 5 hrs on high and it did the same. So adjust heat according to your time on hand.

Total Servings: 6 Total Cost: $6.00
Ingredients:
4-6 Chicken Breasts or 1 Whole or cut up Chicken
1 Can of any kind of Beer
1/2 tsp Garlic Powder
1/2 tsp Basil
1/2 tsp Paprika
1/2 tsp Black Pepper
1/2 tsp Kosher Salt
*You can use whatever spices you like
- Put all ingredients into crockpot
- If frozen cook on high 4-5 hours or low 8-10
- If fresh cook on high 3-4 hrs or low 7-8 hours if fresh
SO, I shared this recipe with quite a few people when you posted this... they had success and loved it!! My mom used Butterball Turkey breast and another friend used Split Chicken breast on the bone because they go on sale frequently! AWESOME easy recipe! Thanks for sharing!

DeleteIt's completely safe for children. All the alcohol burns off when heated.
DeleteAlso if you want to add a little sweetness a can of coca cola or sprite instead of beer will work also.

DeleteNo. The liquid from the beer or soda will be enough. One of the many miracles of the crock pot it it keeps all the moisture in and as the chicken cooks down it will be able to cook in its own juices. I live my crock pot!

DeleteYou won't believe this but I use a can of diced tomatoes and a hand of green olives (plus some of their juices). Great on rice
DeleteI plan to try this with a can of ginger ale, maybe some pineapple chunks, garlic.....Love the ease and the possibilities. Only recently began using the crock pot for things other than winter stews and chili. Loving it!

I have a gluten allergy and so I couldn't use regular beer but I did use a cider beer and it was fantastic!!! The taste of the apple from the beer really worked well. Thank you so much for sharing!!!
DeleteBTW, just so you know...the alcohol never completely burns off; that's a myth. But, after 5 hours or so in the crock pot, it's probably less than 5%, so more than likely safe for anyone. But if you have religious objections, it still has alcohol.
Deletei tried this recipe the other night and was very disappointed. i used chicken breasts, a can of beer and several different spices. it sure made the house smell delicious, but the chicken was very dry and tasteless, even with the spices. i made a gravy out of the "juice" left in the crockpot to give it some more flavor, but i was not at all impressed. maybe it would be better with a whole chicken. :(
DeleteI would always use chicken on the bone vs. boneless breast because of the moistness factor, keeps it from getting dry...
DeleteIt will definately make a difference if you use chicken breast versus the whole chicken. The skin locks in moisture and there is a much higher fat content in the whole chicken.
DeleteI would note a word of caution in taking frozen meats from the freezer into the crockpot, especially a whole chicken. Unless you have a high-powered crockpot and have checked the internal temperature of the chicken, you are not likely getting the chicken out of the bacterial time danger zone in 4 hours or less, even on high.
This recipe looks great and I can't wait to try it. I've always cooked beer can chicken in the oven. Thanks for the alternative.
any time you cook with alcohol it is just for tenderizing. The alcohol cooks off. You would be surprised how many things you eat out that are cooked with alcohol. Dont be afraid to try something just because it has alcohol in it. The longer you cook something the less alcohol that remains. For example: something that is cooked for 2.5 hours has 5% alcohol left over. Since most items cooked in the crock pot is cooked for way longer than that it is safe to say that most of the alcohol is gone.

DeleteIf your crockpot is deep enough to have the chicken up on end with the lid on then I think you coukd otherwise it wont work the way it would on the grill since it needs to be upright for the beer to steam it from the inside out

DeleteI just put it in the crockpot and don't brown it. It will fall off the bone sort of like shredded or pulled chicken. If you want it browned you put it in the skillet first. But it still will fall off the bone when cooked. hope this helps. Enjoy!

ReplyDeleteThis also works really well if you use plenty of pepper, & some garlic powder & kosher salt. Then add a Mike's Hard Lemonade in place of the beer. Really nice & subtle lemon pepper chicken.

DeleteSo...I've never commented on a recipe I found online. I felt like I had to for this one. This was THE BEST chicken I've ever had. Oh. My. Gosh. I cooked it as per the instructions, then added some BBQ sauce after. We had it as pulled BBQ chicken sandwiches. The next night I made BBQ chicken nachos with it! My one year old ate it by the handful ( I gave him the chicken without bbq sauce and threw in black beans and shredded cheese). Thank you for this AWESOME recipe!!

DeleteI make a rub with the seasoning & put it inside & all over chicken. Tben I place the whole chiken with an open can of beer up its butt in the oven standing up in a pan. Make a foil tent over the top & bake. just do a search for beer butt chicken there are many. But I like this method because crock pot cooking is so easy for a busy woman

I am trying to make a lot of chicken at one time and I have the chicken breast on bottom and some legs on top of that - its all frozen so eventually the legs should fall closer into the beer at the bottom. DeleteIf you try thinner meat make sure you don't cook it very long they will dry out. And I don't think it tastes like beer...but I like beer :) and as far as the whole chicken YES I have done that before and love it! Keep it frozen just put in crockpot, add spices and beer and cook! What a terrific and easy meal! I was going to cook drumsticks for dinner but wasn't sure how. Now I know! I can't wait to try it! And with the Sam Adams Summer Ale (which is all the beer I have), the chicken might end up with a slight lemon flavor too! I can't wait!

ReplyDeleteGeneral Crock Pot questions for you ladies. I find when I make things in the crock pot its tastes dried out a lot of the time. I do have a very large crock pot and I'm not doubling recipes or anything like that. Do you think it's good big and causing things to dry out?
ReplyDeleteIt might be. I would try a smaller crockpot or doubling the recipe. A discussion on the food.com website says that because of the larger size, "[i]f the crockpot is not more than halfway full, it may cook too fast," and thus, if you are cooking using a larger crockpot but following the suggested cooking times, your not-full-enough pot may be cooking it faster, leaving it dried out. DeleteI also have had this problem, even when cooking with it almost full. I've since started cooking on high, and turning it down as soon as I notice it's hot... but I turn it down to warm. My WARM (lowest) setting is hot enough to cook the roast! I sear it, put it in before church (aka 9 am) and it's done by 5... but on low (mid setting) it was really dry. HTH
DeleteI cook a whole chicken like this once a week but use water, carrots, onion, celery, salt and pepper and a bay leaf. I cook on low for 8 hours (from fresh not frozen) and end up with succulent mouthwatering chicken the falls off the bone which I shred for sandwiches, soups, salads, pasta etc... Plus I have created a beautiful chicken stock which I strain (discard the vegetables) and store in ziplock bags in the freezer ready to add to casseroles, soups etc...

ReplyDeleteMade this last night exactly like the recipe. I don't really understand all the hoopla over this recipe. It ends up being boiled chicken with little flavor. The photo shows browned chicken, but this is not the actual end result.

ReplyDeleteHow I get my chicken brown is to slow cook it in the oven sealed in with heavy duty foil. Slow cook for about 6 hours on 275 degrees F or for about 3.5 hours on 375 degrees F. Once the meat is tender I remove the foil and let the meat brown by turning up the temperature to 450 degrees F. I cover the meat or chicken with juices from the pan every 5-7 minutes for about 45 minutes. This gives a lovely golden color and the meat remains tender and juicy.
DeleteYes, if you want your meat for any crock recipe to be brown, you need to sear on the stove first, then place in crockpot.
DeleteTastes great! I loved it! I threw some baby carrots in and they were nice and soft. The chicken was good. During the first 2 1/2 hrs of the chicken being in the crockpot I was worried that it would smell really strong like beer. The aroma of the chicken by the end was splendid. Took 2 minutes to prepare. Will definitely be making this again.

As I walked past my 10 year old with the can of beer at 10:30 am she curiously said what are you doing mommy (I'm not a beer drinker) and I said oh don't worry I'm not drinking it, just cooking dinner with it. She said well I'm not 21 and so I can't eat that lol I explained it to her the alcohol cooks out and not to worry . Hoping it's a hit here like everyone's post. Can't wait for dinner tonite
ReplyDeleteI cooked a pork loin roast in the crock pot tonight with a bottle of beer. Perfect! Never had pork so moist and tasty! I'm not a beer drinker either but happened to have some from company over awhile back.

ReplyDeleteI like to remove some of the skin and leave some of it. It is up to you if you like the skin leave it on. Some though prefer to remove the skin. Enjoy :)

ReplyDeleteTo get the chicken brown before hand just brown it on the stove using a frying pan and some cooking oil, then transfer to crock pot. Frozen chicken will result in more water in the crock pot during the cooking process, but that isn't a big deal. You can also use chicken broth. Try putting frozen breasts into a crock pot with either one jar of salsa or picante sauce( they work the same) shred the chicken when finished and use them to make quesadillas! Put the chicken onto a tortilla with some white American cheese and refrained beans! Yummy!
DeleteI added some greek seasoning to the chicken before pouring a can of beer over the top....no other seasoning needed! After the chicken breasts (I used 6 frozen, boneless) were done I made a roux on the stove and added the broth from the crockpot to make a gravy. A side of egg noodles made this the perfect sunday meal!

DeleteI was making some chicken wings today and I remembered seeing this recipe on Pinterest, so I improvised it a bit and it turned out great. I threw a large bag of wings in the crockpot with a can of beer, a few shots of Siracha and some minced garlic, salt, pepper and paprika. After they were cooked, I added some BBQ sauce and hot pepper sauce and let them sit about an hour, then carmelized on the grill. BIG HIT! Thank you!

DeleteAmerica's Test Kitchen tested an assortment of beers in recipes and found that non-alcoholic beer (O'Doul's) actually gave the best flavor. So I've been using it and agree - it tastes great in recipes. I prefer the red one (lager?) for most things, but the green one is good too. An added bonus I've found is that I can keep it in the pantry and it will still be there when I come for it - my husband won't drink it. :)

DeleteI have this going in the crock pot right now with a whole chicken. I ended up having to partially thaw the chicken so I could get the bag of gunk out before I put it in the crock pot. THAT was a challenge. But it's in there now (with Harpoon Winter Warmer beer) and I think I might go toss a bag of baby carrots in with it.
ReplyDeleteWell, this is most extraordinary. I have a new Black and Decker crockpot. I followed the recipe, added a few more herbs (tarragon and dill) and set it at "high" for six hours. At the end of this, I am left with a watery, flavourless sauce and anaemic-looking chicken. (I used boneless, skinless breasts.) I am wondering if there is something wrong with my crockpot as the chicken (top quality, which I frequently purchase) is very tough.
ReplyDeleteI noticed someone back there saying her crockpot was "bubbling" and emitting a lovely aroma. Mine certainly never got close to bubbling. Does it sound to any of you crockpot-experienced ladies that there might be something wrong with the actual pot? (I've had it for five years so no warranty unfortunately. It's sat in the box all that time and came out just for this recipe.)
Antonia did you cook fresh or frozen breasts? If fresh cook them on low. If Frozen they have more water but some crockpots you can't cook on high as long. Once the chicken is cooked in this manner it is bested served shredded or pulled if on the bone. I would say the key is finding the right time with your crockpot it is probably a great crockpot. Try cooking on low and checking the meat in 1/2 the time then let it cook longer checking every hour. You should only have to do this once to see how hot your crockpot cooks so you can adjust the times there after. Good Luck let us know how it goes for you :)

ReplyDeleteAwe thanks! Likewise Antonia;) I would try one of my no fail favorite crockpot recipes next to test the heat of your pot. My biggest suggestion...and some people don't agree...but if you use a crockpot cook the meat in it frozen. It has added water and makes the meat SUPER moist especially a roast.

But my easy steps are:
4 Frozen Chicken Breasts or 1 Frozen Pork Roast
2 Cans of Seasoned Black Beans in Sauce not drained
1 Can of diced tomatoes
Put it all in the crockpot
Add any spices you want like Garlic, Hot Sauce, Cumin, Onion whatever you want...
Cook on high for 4 hours. Then for you I would check it and break up the chicken stir. Cook another 1-2 hours if seems still good to go...if it seems almost cooked put on low.
Serve over Rice :)
Best to you Antonia. I had 2 kids and bed rest and LIVED on cooking in the crockpot for awhile and still do. SO...I think you will like it once you try some things. Let us know :) You can search "Crockpot" on my site for all my ideas.
Not to dog your recipe or post because i know a lot of people do this but you are NOT supposed to cook FROZEN meat in a crock pot. The internal temperature does not reach a high enough point to properly kill all the bacteria. You may not get deathly ill but it can cause intestinal issues that you may not realize this is what it causing it...especially if you have young children or people who are susceptible to tummy trouble. You could do this in the CP but would need to finish it off in an oven above 350 and that would even give it a nice browning..which is evident in the picture. Which the picture does NOT look like this finished product at all!

DeleteI understand your concern. Food safety is my top concern when cooking since I have a 4yr old and 2yr old. So when cooking frozen meat I did my research of course. Most crockpots get to a temperature high enough to cook and kill bacteria. Just make sure you cook on high and make sure any poultry is fully cooked before eating! Happy cooking :)
I just tried this recipe today... followed the directions except my crock pot seemed very full with little liquid (I had 5 leg quarters) so I added a cup of chicken broth.

ReplyDeleteMade this today. Very very good. I used defrosted bone in skin on chicken parts & added a few big squirts of ketchup to the beer & spices. I cooked on low for 8 hours in my Crock Pot (brand name) & it was brown bubbling & I could smell it in my garage. I also made gravy from the sauce & the breasts needed it as they were very tender but a tad dry. Highly recommend.

As it happens, crock-pot cooking is one of the sure-fire ways to burn off the alcohol because it cooks low and slow for a long period of time. However, it's a common misconception that it burns off in ALL cooked foods. It doesn't. It depends entirely on the method and the length of time it's been cooked. ReplyDeleteI made this yesterday and it worked great in terms of the cooking and the timing and everything, but it tasted terrible - the chicken had this sort of bitter strange taste to it! I know the chicken wasn't bad because I just bought it. I cooked from frozen, but it definitely got hot enough (I checked with a thermometer). Could it have been the type of beer I used? It was a strong ale (just what we had in the house and no one wanted to drink). Do you think it makes a big difference? Thanks!

ReplyDeleteI am trying this recipe this weekend. I cant understand why anyone would cook chicken frozen though, especially before washing it. Chicken is the nastiest meat to handle. I guess its because I grew up around chicken houses and plants. I dont know anyone that cooks chicken without washing it first. You can't wash it while its still frozen.

Great recipe! Thanks for posting it. Made it exactly as stated, using frozen, skinless breasts. Cooked all day. Shredded very nicely, had a nice delicate taste by itself. Hubby and son liked it with spicy BBQ sauce, while I mixed it with quinoa and sautéed veggies. I intend to try some of the variations as well, next time. Great job!

ReplyDeleteI put this in my crockpot yesterday. I used 4 chicken breasts, and cooked for 8 hours on low. The smell was fantastic when I got home. But unfortunately, the chicken was dry. Any ideas why my chicken would have been so dry?
ReplyDeleteHi Meegan. It sound like you have a very hot crockpot. Were the breasts fresh or frozen. they will have more liquid if you cook them frozen. I only cook frozen in crockpot but some disagree. If they are fresh I would cut the time to 6hrs. They should be tender and fall apart. almost like shredded pork/chicken. Let us know :)

Tonia. Some are not liking using the frozen chicken. I use frozen chicken in the crockpot. I don't brown it like the picture I pull it apart and use over rice, in burritos, or on a sandwich. If you want it browned it is best to not cook in crockpot with a liquid it falls apart. Let us know how your comes out :) enjoy!

DeleteI cooked this last night it was really good like eating basted turkey! Lol but it didn't lookalike the picture posted it had a lot of juices at the bottom which the chicken was swimming in husband didn't care for it

ReplyDeleteI have is cooking right now....I used ingredients above but added...1/2 t cumin, 1/2 t onion powder, 1/2 t oregano, 1/2 thyme, 1 T powdered ranch, and a can of cream of chicken. I want it to have a creamy gravy for rice. Oh...and I used bid light lime. Hope it turns put yummy for us.....if not....then for the doggies. Ha. :)

2 T butter

ReplyDeleteLooks like this will be a hit for us, I had some quarters frozen so I partially thawed the pulled apart and rinsed. I immediately seared them on the outside. Two at a time in my nonstick pan with olive oil,then transferred to my crock... I added a bottle of beer and a cup or two of Dr pepper, garlic and onion powder, thyme salt and pepper..smells pretty great. I was worried about blandness, but I pulled a piece of chicken off to taste..very nice.! I'm serving with oven roasted sliced potatoes that my kids adore. Feeling very Susy homemaker today, and It was easy! .99 cents a lb here for the chicken- I'm thinking it works out to about a dollar a person for our whole dinner tonight including the beer!

ReplyDeleteI just this and it definitely fell off the bone! Very juicy and tender however it had a strong beer taste. I even added half a cup of ketchup to the crock pot. My hubby loved it, but the beer taste threw me off. It could be the type of beer I used. I only had Blue Moon on hand. I ended up tossing my share in honey BBQ sauce and tasted pretty good after that.

ReplyDeleteYes it falls apart like shredded chicken or pork. I wrote this recipe back in 2010 and it won't let me change the picture :/ I might have browned it that day and took wrong picture. So yes it falls apart. I make it sometimes falling apart but not shredded and put it over rice.
DeleteI made this for my husband last night, and he said it was amazing...I used 1 can Coors Light, Tastefully Simple Seasoned Salt, Italian Seasoning, Garlic Powder and Pepper. I used frozen legs and cooked on high for approx 6hours...just make sure you season liberally....yummy!

DeleteAfter seeing people raving about this all over Pinterest I decided to take a chance and make it for Father's Day this year. Bottom line, I ended up having to run to the grocery store to get a quick replacement meal because this was so gross. Followed recipe to a T. What am I missing? It was completely bland. Just tasted like boiled chicken. Also the chicken had a really weird slimy texture. I really wanted to like this recipe! Any idea why I got these results?

I made it tonight. I used boneless, skinless chicken thighs - 4 pounds and about 1 1/2 bottles of 12 ounce beer; in case you're curious I used a lager (Miller Gold Draft).
ReplyDeleteI cooked it on high for 3 1/2 hours and it was falling apart. My preteen and teens like it. Made enough for left overs. I would definitely make this again and add maybe 2 pounds of carrots on top.

Hi guys, I've recently moved out of my parent's house and looking for new and easy things to cook. I generally like drumsticks and I'm sure this is a dumb question but will 4 drumsticks still work the same? I would probably be using them from the frozen state. Thanks for the help guys!
ReplyDeletehi lai. I would cook them on low for the first time and watch the time. You don't want them to get dry and that is not a lot of meat. So 4 drumsticks on low might only be around 3hrs. you want it to fall off the bone. then it's done. you will LOVE using the crockpot now that you are out on your own. DeleteI have a pretty large crockpot and with 3 chicken breasts and just 1 can of beer the chicken isn't even half immersed. Has anyone tried adding coke after the beer is already in there? If not, how do you think it would taste if I did that?

ReplyDeleteI just read through all the comments on this recipe. There are SO many variations in reaction that I doubt anybody could really say what is the "best" beer to use. I prefer using a beer with a stronger flavor such as New Castle (or even Guinness on occasion), but I'm sure there are many who would hate it.
DeleteI used to use cookbooks and painstakingly follow recipes as if they were chemistry experiments. Then I started watching cooking shows and realized that all the best cooks are "loose". Throw in some of this, some of that, a dash of something more... taste it and keep going. After you try some beer recipes, you'll know what works best for you. I now have learned to treat recipes as just general guides. Use them only as a starting point and have fun!

So I just put the whole chicken in. I stuffed the Chicken w/ a 1/2 apple and then I cut up a yellow onion and placed the other 1/2 apple on the bottom I put the chicken in then put the rest of the onion on top. Added a smokey apple rub I had on hand, salt pepper, garlic and a can of bud light and a secret ingredient of Honey Dijon Dressing I was thinking adding Pineapple (I like to experiment obviously lol) but we'll wait and see how this turns out LOL

ReplyDeleteMade it today for the first time. I used 6 fresh boneless, skinless chicken breasts, cooked it on high for about 3 1/2-4 hours and it was perfect!! Very juicy, lots of juices/beer left, great flavor. I browned them in a skillet at the end (removed from the crock pot, browned them, then placed back in the crock pot and juices.). Turned out perfect!! I sell Tastefully Simple gourmet food mixes so, I'm pairing the chicken with Tastefully Simple's Bountiful Beer Bread and steamed broccoli. YUMMY! And the house smelled DIVINE when I walked in the door :)

I do love my crock pot, but I will be cooking about 40 pieces of chicken for 30 people right after Christmas, when my son comes home for the first time with my brand new grandson :), so I will be cooking this in the oven. Hi Diane. If you use fresh chicken in pieces I would cook at 350 for 45minutes to 1hr. It should start to fall off the bone. Have fun with your family enjoy :)
DeleteI'm making this right now. I just want to add that the cost says $3, and that is so very false. The bag of chicken breasts alone was $5 on SALE. Then add the cost of the beer, and the spices...You're looking at atleast twice the supposed cost stated here. Even if I already had all the spices, it would still be more than $3.

ReplyDeleteif you use a stout or porter beer the chicken has a lot of flavor. Use whats left in the crockpot to make gravy and have it with mashed potatoes!
