Yogurt Apple Salad

I don't care for mayonnaise, and that is what apple salad usually has in it. I wanted to create a yummy summer salad, that was easy, something you could whip up for this weekends backyard barbecue, that has no mayonnaise! This turned out light and delicious! I think you will love it!

You can play around with the ingredients according to taste. Try a flavored yogurt if you like, or you can use whatever nuts you have on hand, also you can substitute dried cherries, or raisins, for the cranberries. I was even thinking that a bag of mixed fruit and nuts might be yummy or shredded coconut.
You can use any kind of apples. I like the tart taste of granny smith and they stay pretty firm for salads and cooking and don't get mushy. I like to leave the peels on but most people don't care for that, so I removed them. You can also add celery or shredded carrot for color. Sliced grapes are even yummy in this salad, I added them because my toddler loves them.

I would love to hear from you. Have a GREAT holiday weekend with Family & Friends! Enjoy!
