Simple Calzone
I was inspired today to make a Calzone. I had a bunch of leftover cheese, and vegetables, that needed toflatbread, using the Martha White Pizza Crust mix that I swear by, but wanted to try something new.

The key to a good calzone, is to not use a red sauce inside it making it soggy, but to use it on the side for dipping, and use lots of cheese and fillings. I did not have any ricotta, but had some cottage cheese that I needed to use up, and it worked great!
This is a fun recipe to experiment with because you can just about put anything inside that you want for the ingredients. I listed some ideas below to get you to think and explore your options. You can even make it strictly vegetarian. This also makes a nice, healthy, toddler food that your child will love. Fill it with all kinds of vegetables and healthy cheese, they will never want pizza again.
From 1 crust you can make 1 large or 2 medium calzones that can feed 2-4 people. If you want more I would suggest doubling this recipe. You can also make smaller ones by cutting the crust into 4 pockets. If you double this recipe make each dough package separate. Don't combine them it will turn out too thick to spread out evenly.

1 Package Martha White thin Pizza Crust Mix (Cost .89 and next to the flour and spices)
1 8oz package of Mozzarella Cheese
4oz of Ricotta Cheese or Cottage Cheese
1/4 Cup Parmesan Cheese
3oz of Turkey Pepperoni-which is 1/2 a package
4oz of Sliced Mushrooms
1 tsp Basil
1 tsp Chopped Garlic or Garlic Powder
2 Tbsp Olive Oil
Spinach
Chopped Broccoli
Diced Tomatoes
Olives
Diced cooked Chicken
Ham
Italian Sausage
Feta Cheese
Pesto
Onions
Peppers

- Preheat oven to 425°
- In a bowl mix your pizza crust mix with 1/2 cup of hot water
- Drizzle with olive oil form a ball, cover, and let sit 5min
- In another bowl combine all ingredients for filling, except oil, mix well
- Oil your pizza stone or pizza pan
- Lay your dough out on pan
- Press out dough with fingers until thin
- If doing 2 Calzones cut dough in half
- Pour mixture into center of dough
- Fold dough over filling, and pinch edges very well
- Brush top with olive oil
- Take fork and poke holes into top of dough
- Bake for 20-25 minutes until brown
- Serve with warm marinara sauce
