Apple Spinach Salad
I first had this on the road when I was traveling. A co-workers mother had made it and it was so delicious! I had to have the recipe. I have tweaked it a little over the years to suit my taste.
This is a great salad for a dinner with lots of people because it usually satisfies
many different tastes.
It is a simple salad that you can add as much to as you like. I like to sometimes add cucumbers, strawberries, blueberries, dried cranberries or raisins, and add a little feta cheese.

Ingredients:
Total Servings 8-10
1 Bunch of Romaine Lettuce
1 lb of Fresh Spinach
1/2 Cup Cashews
2 Granny Smith Apples
Dressing: 1/4 Cup Apple Cider Vinegar 1/4 Cup Sugar 1/4 Cup Olive Oil 1/4 tsp Garlic Salt 1/4 tsp Salt

- Chop Romaine and Apples into chunks
- Place in bowl spinach , romaine, cashews, and apples
- In a separate bowl mix all ingredients for dressing
- Pour over salad and gently toss
