Make Ahead Healthy Pancakes
I don't know about you, but I am not a morning person. When I wake up I like to have a cup of coffee and let my head clear from the fog. My toddler on the other hand is ready to go.
I want her still to have a nutritious breakfast when she gets up, but don't want to do more then push a button for it. I like breakfast recipes that I can make one time a week and have it in the fridge for the rest of the week.
It is funny I bought whole wheat pancake mix thinking it must be healthy and did not even look at the ingredients. I got it home, was making a huge batch, sitting there reading the label, and was shocked at the sodium and sugar content. I had never made homemade pancakes. Did it even exist? I started thinking it can't be that hard... and it has to be healthier then this mix!
So... I went to work on creating a yummy, homemade, whole wheat pancake, that I could still keep in the fridge for up to a week and it be OK. I eliminated the egg and oil, with applesauce and flaxseed meal. They turned out WAY better then the mix and cost less. I could not believe it.
You can do one of two things: You can make them all, put them in a Ziploc, and just 25sec in the microwave when you want to have one. They can last up to 10 days in fridge. Or, you can create the batter, put it into a squeeze bottle container like an old ketchup bottle. I have mine in a sports bottle that mixes protein shakes, it works great. Then just warm up the pan, pour, and cook. The pre-made batter can last in fridge up to 7 days. Enjoy!

1 1/2 Cups Whole Wheat Flour
2 tsp of Baking Powder
2 Tbsp of Flaxseed Meal
2 tsp of Cinnamon
2 Cups of Milk
2 Tbsp of honey
1 tsp of Vanilla
2 Tbsp of Unsweetened applesauce
- In a bowl combine your dry ingredients and mix well (top 4 ingredients)
- Pour in your milk and mix until it is well blended, and not to thick
- Add in your honey,vanilla, and applesauce, mix well
- Add in a handful of fruit like blueberries, nuts, or a mashed banana, blend in
- Spray a pan with Pam
- Heat to medium heat, cook them as needed
(I used 1 mashed ripe Banana)
*You can serve them with fruit on top also.
