Tomato Feta Basil Salad
I love tomatoes! Right now they are in season, so there are a lot of sales at the
store and with all the rain I have lots of tomatoes and basil growing like crazy in my garden, so I wanted to create an easy summer salad to use them up.
This is a simple and yummy salad. It is a lot like a caprese salad, just using feta instead of mozzarella, and chopped up in a bowl.
You can even use different colored tomatoes to brighten it up or you can add a diced cucumber, for an additional ingredient. My Toddler loves this salad! Enjoy!

Ingredients:
4 Large Tomatoes
6oz of Feta Cheese
1/8 Cup of Extra Virgin Olive Oil
1/4 Cup of Balsamic Vinegar
1/2 Cup of Chopped Basil
1/2 tsp of Kosher Salt
1/2 tsp of Crushed Black Pepper
- Core your tomatoes and chop into cubes
- Crumble your Feta, if it is not already
- Combine all ingredients into a bowl
- Gently stir or put lid on bowl and shake
- Let sit 10 minutes and serve
