Asparagus


I love Asparagus! I would eat it every night if I could. I am going to give you a couple of different ways, that are yummy, to cook your asparagus.
*To make your Asparagus extra tender, cut 1/2 inch off the bottom, and soak them in water for 15 minutes prior to preparing them. Use this method in all your recipes below.

First way: Boiled
  • Bring to boil for 7 minutes
  • Drain water
  • Drizzle 2 Tbsp of Extra Virgin olive oil
  • Sprinkle kosher salt and fresh ground pepper
Second way: Saute
  • In saute pan drizzle Olive oil
  • Put spears in pan
  • Saute medium heat for 7 minutes
  • Sprinkle Kosher salt and Fresh ground pepper
Third way: Roasted-This is my favorite!
  • Preheat oven to 425°
  • Place asparagus in casserole dish
  • Drizzle Olive oil
  • sprinkle Kosher salt and Fresh ground pepper
  • Bake for 30 minutes until becomes brown
Fourth way: Prosciutto Wrapped Asparagus- This was sent to me by my friend Lynda. It is from Allrecipes.com which is a great recipe site, you should check it out.

1/2 lb Prosciutto Sliced

1/2 8 oz package of Neufchatel Cheese
12 Spears of Asparagus trimmed
  • Preheat oven to 450°
  • Spread prosciutto slices with Neufchatel cheese
  • Wrap slices around 2 or 3 asparagus spears
  • Arrange wrapped spears in a single layer on a medium baking sheet
  • Bake for 15 minutes until asparagus is tender
