Asparagus
I love Asparagus! I would eat it every night if I could. I am going to give you a couple of different ways, that are yummy, to cook your asparagus.
*To make your Asparagus extra tender, cut 1/2 inch off the bottom, and soak them in water for 15 minutes prior to preparing them. Use this method in all your recipes below.
First way: Boiled
- Bring to boil for 7 minutes
- Drain water
- Drizzle 2 Tbsp of Extra Virgin olive oil
- Sprinkle kosher salt and fresh ground pepper
- In saute pan drizzle Olive oil
- Put spears in pan
- Saute medium heat for 7 minutes
- Sprinkle Kosher salt and Fresh ground pepper
- Preheat oven to 425°
- Place asparagus in casserole dish
- Drizzle Olive oil
- sprinkle Kosher salt and Fresh ground pepper
- Bake for 30 minutes until becomes brown
1/2 lb Prosciutto Sliced
1/2 8 oz package of Neufchatel Cheese
12 Spears of Asparagus trimmed
- Preheat oven to 450°
- Spread prosciutto slices with Neufchatel cheese
- Wrap slices around 2 or 3 asparagus spears
- Arrange wrapped spears in a single layer on a medium baking sheet
- Bake for 15 minutes until asparagus is tender
