Chicken & Dumplings
Makes 8-10 Servings Cost: $7.25
Ingredients:
3-4 Chicken Breasts
2 Cups of Bisquick Mix (I use the Light version)
1 Box of Low sodium Chicken Broth
2 Cans of Low Sodium Cream of Chicken or Mushroom Soup-Optional
5 Carrots-Optional
2 Stalks of Celery-Optional
1 tsp of Garlic Powder
1/2 tsp of pepper
1 tsp of Basil
1/2 tsp of Finely Chopped Rosemary
Salt to taste
You can also Make this a vegetarian dumpling soup by using vegetable broth, omit the chicken and add more veggies.
I don't have this very often it is definitely on my comfort food list :)

- Cut up your Chicken Breasts into strips or chunks-I like small strips
- Chop your Carrots and celery
- Put Broth, Cream of soup, vegetables, chicken, herbs & spices into large pot
- Add 2 Cups of water
- Bring to boil and cook until chicken is almost done
- Make your dumplings according to the dumpling recipe on side of box
- Drop by spoonful into boiling broth
- Cover and simmer until dumplings are cooked through
- Approximately 30 minutes
