Chicken & Dumplings

Makes 8-10 Servings Cost: $7.25

3-4 Chicken Breasts

2 Cups of Bisquick Mix (I use the Light version)
1 Box of Low sodium Chicken Broth
2 Cans of Low Sodium Cream of Chicken or Mushroom Soup-Optional
5 Carrots-Optional
2 Stalks of Celery-Optional
1 tsp of Garlic Powder
1/2 tsp of pepper
1 tsp of Basil
1/2 tsp of Finely Chopped Rosemary
Salt to taste

  • Cut up your Chicken Breasts into strips or chunks-I like small strips
  • Chop your Carrots and celery
  • Put Broth, Cream of soup, vegetables, chicken, herbs & spices into large pot
  • Add 2 Cups of water
  • Bring to boil and cook until chicken is almost done
  • Make your dumplings according to the dumpling recipe on side of box
  • Drop by spoonful into boiling broth
  • Cover and simmer until dumplings are cooked through
  • Approximately 30 minutes
This can be a budget meal. the main ingredients are the broth, chicken, and Bisquick. You can then add whatever herbs, and vegetables that you have, or like to taste. Play around with it.

You can also Make this a vegetarian dumpling soup by using vegetable broth, omit the chicken and add more veggies.

I don't have this very often it is definitely on my comfort food list :)
