Salsa Chicken

Need a quick, healthy meal when you get home, this would be the one! You can
make this even if you forgot to thaw the chicken out. This can also be done in the crockpot while you are gone.

I buy the ready made, fresh salsa in the produce section at publix. They a
re usually $2.50 each. Which is about the same price as in the jar, but it has less sodium, preservatives, and carbohydrates. If you have a jar of salsa, that will work too. We like hot, go figure, but they have mild and medium too.

Ingredients:


4-6 Chicken Breasts

1 Container of Salsa


  • In a casserole dish place your chicken breasts
  • Pour container of salsa over breasts
  • Cover with foil
  • Bake 400° for approximately 30 minutes (If frozen cook for 1hr, check center.)

*In crock pot place chicken frozen or thaw cook high for 3hr, low for 5hrs.
Serving suggestions:
Place mixture in a wrap, burrito, over brown rice, couscous, or tortilla chips. Top with sour cream, cheese, hot sauce, guacamole, lettuce, or peppers. If doing chips make a taco salad and dice the chicken up.

If doing low carb, my favorite way is to make a salad. Place this over a bed of lettuce. Top with sour cream, cheese, jalapenos, peppers. Whatever you have or like. The sour cream makes a yummy dressing.

  1. Delicious! This meal was realy easy. I already had all the ingredients: used salsa that I had in the pantry and frozen chicken. I served it with rice, a bit of light sour cream and reduced fat shredded cheese. It was so yummy. Definitely a must make!
