Chicken & Smoked Sausage Gumbo


This almost makes like a Gumbo type of dish. I threw this in the crockpot yesterday so the family could have dinner last night while I was gone and it turned out great.


Today for lunch, I made Quesadillas with the leftovers. The chicken just shredded apart, sprinkled a few leftover tomatoes, topped with cheese, pressed and cooked it was so good.

Total Servings: 4-6 Total Cost: $5.50
Ingredients:


4 Frozen Chicken Breast
1 package of Smoked Sausage
2 Cans of No Sodium Diced Tomatoes
1 Tbsp of Garlic Powder
1 Tbsp of Basil
1 tsp of Red Pepper Flakes
*Optional ingredients: Diced Onion and Green Pepper



  • Cut up your Smoked in round chunks
  • Put all ingredients in crock pot
  • Cook on High for 3.5 hours low for 6 hours
  • Serve over Brown rice or by itself for low carb
