Creative Leftover Pasta-Tuna Mac & Cheese w/Veggies


For those who know me...you know that I like to use everything up and not

waste food whenever possible. I like to get creative and find meals when you think you have nothing to make.

I take this for granted in thinking everyone does it, but I shared a couple tips with a friend this week, they were so surprised how easy and said I should share with others.

So, I am going to write a couple of posts about using leftovers. The best way to use leftovers is to make them not seem like they were leftovers...but an entirely different meal all together.

This leftover suggestion is something I do all the time for a quick, healthy, lunch or dinner. All you need is leftover pasta noodles, something that most people throw away because you boil the whole box.

This is also a dish that my toddler loves because she thinks it is macaroni and cheese. Little does she know I have thrown in the good stuff too :)

Total Servings: 4 Total Cost: $1.50

2-3 Cups of Cooked Leftover Pasta Noodles-Any kind
1/2 Cup Milk
1 Cup Shredded or Diced Cheese-Any Kind
1 Can of Tuna-Drained
1/2 Cup of any kind of frozen vegetable-Ex: Peas, Lima's, Green Beans
Salt & Pepper to taste

  • In a saucepan combine all ingredients
  • On medium heat bring to slight boil
  • Stirring constantly until cheese is melted
  • When cheese is melted remove from heat
  • Serve hot
