Baked Chicken Cordon Bleu

This is a low carb version of an easy and delicious recipe! I can't remember where
I read the tip of using cheese sticks, but it works great! I find the cheese tends to stay put more inside the chicken, and is easier to roll up. My husband doesn't care for Swiss cheese, so I have adapted it and use Mozzarella  You can use whatever kind your like.

If you add the sauce toward the end of cooking time, the chicken tends to be a little more crispy on the outside. But, if time is and issue, you can add it at the beginning and it will be fine. If you don't care for the sauce just make it, heat in microwave for 2 minutes, and serve it on the side.

I would love to hear from you. Enjoy!
