Baked Potato Skins

OK, for all you low carbers, this recipe is for your cheat day...something to look forward too :) Baked Potato skins are delicious, and a healthy alternative to the restaurant ordered potato skins. Your kids will love them too. They are also a fun and easy recipe to get the kids involved in the kitchen with.

When you scoop the centers out, save them in a bowl for another meal. Just simply mash them and make mashed potatoes. Just add a little milk, salt, pepper, and garlic powder. Mix or beat until smooth.


Another way I like to serve them are in the winter, if you have leftover chili, pour the chili into the center, sprinkle with cheese and bake. Serve with sour cream or ranch for dipping. Enjoy!

Total Cost: $3.00 Total Servings: 12-16

6-8 Red Potatoes-(Don't use the little creamer potatoes, you want the bigger red potatoes.)
8oz of Any Kind of Shredded Cheese or Feta Cheese

Turkey bacon Pieces-Optional (If using regular bacon pieces use a brand like Hormel never Bacos)

2 Green Onions Diced-Optional

4oz of Sour Cream or Ranch dressing

Kosher Salt

Crushed Pepper

Garlic Powder

Olive Oil
  • Preheat oven to 425°
  • Wash your potatoes
  • Wrap them individually with saran wrap
  • Microwave them all for 8-10 minutes (Depending on how many potatoes)
  • Put knife through them and see if they are soft through
  • Take them out and cut them in half
  • Take a spoon and scoop out center, leaving a little potato on the edges inside
  • Place them side by side on cookie sheet
  • Drizzle all of them with a little bit of Olive Oil
  • Sprinkle Garlic Powder over all of them
  • Sprinkle Kosher salt and Crushed black pepper over all of them
  • Bake for approximately 30-40 minutes until them start to brown
  • You can turn on the broiler for a few minutes if you want them crispier
  • Remove from oven
  • Top with whatever ingredients you wish
  • Sprinkle cheese on tops
  • Bake for another 10 minutes until cheese is melted
  • Serve with Sour Cream or Ranch Dressing

  1. I just cut (washed) potatoes in half, put them in the oven, bake them on the same temperature I would bake pizza. Wait until they are brown. Done!
    Then let the kids put the cheese and other stuff individually.
