Chicken Tortellini w/Fire roasted Tomato Sauce

If you want a quick meal, that your family with love...this is it! Keep in mind that
quick, doesn't always have to mean unhealthy! :)

A great thing to always have in your freezer or fridge for last minute meals is pre-made pasta. They make all kinds now, wheat, veggie, meat, and traditional cheese. They are great to throw into soups too.

I am going to give you a couple ideas of ways to make your chicken for this dish. You can also just do veggies, and chop up some vegetables that you need to use up like squash, peppers, or mushrooms.

I suggest to stay away from chicken that is pre-packaged, pre-cooked, or pre-marinated. Next time you think about buying it, look at the preservatives, and sodium content, you will be amazed! And, it is usually twice as much money!

Ideas for chicken in a hurry for any recipe:

Frozen Breasts, Tenders, or Cutlets: Place in skillet with 1/8 cup water, 2 Tbsp of Olive Oil, and some spices, like garlic powder and pepper. Cover and cook on medium heat for approx 5 min. Turn cook other side for approx 5 min. Turn. Check center. Usually done within 2-3 minutes.

Crock Pot:
Before going to work in the morning, put any kind of chicken in crock pot. Whole, Cut Up Pieces, or Breasts. They can be Fresh or Frozen. If doing a tomato based sauce pour it over the chicken. If not, place 3/4 Cup water and whatever spices you like. Cook on High for 4-6 hours, if Frozen. Low for 8-10. If fresh, Cut the time in half.

Deli Rotisserie Chicken from local supermarket: Let your local store cook it for you. You can use these rotisserie chickens for just about anything. Just pull the meat off the bone and put on salads, soups, pasta, sandwiches, tacos, wraps, whatever you like. They keep for a few days in the refrigerator, so buy it ahead when you are at the store, and you will have chicken for meals already made all week.

4 Chicken breasts-Cooked and pulled apart into pieces
1 20oz Package of Frozen or Fresh Tortellini
1 Cup Frozen Spinach
1 28oz Can of Crushed Fire Roasted Tomatoes
1 tsp Chopped Garlic
1 tsp Basil

Serve with Garlic Bread (See recipe suggestion below)
Add caption

  • Boil your pasta according to directions, and drain
  • Put all ingredients into pot, stir well
  • Cook on medium heat, until thoroughly heated
  • Pour onto large serving dish
  • Top with shredded cheese or Parmesan, if you like
Garlic Bread:
  • Get a fresh, french bread loaf from the bakery
  • Cut in half, lengthwise
  • Brush both halves with Extra Virgin Olive Oil
  • Sprinkle with, garlic powder, dried basil, and Parmesan
  • Place under the broiler, on lowest rack, for approximately 5 min until starts to brown
