Easy Breakfast Casserole


My friend Denise made this for my family and it was so delicious! One casserole

dish fed us breakfast for 3 days! It was one of those dishes that was good even when it was warmed up. I was happy to hear the recipe was so easy!

This is a recipe you can play around with the ingredients and put whatever you like in it. You can use egg beaters also instead of eggs. Think of things such as you would put into an omelet.

I made it myself this week and used wheat bread instead of white, tomatoes, turkey sausage, spinach and mushrooms. YUM! I used the turkey sausage because that is what I had. I would have to say it did change the flavor a little bit due to the recipe called for the maple sausage which had given it a little bit of nice sweet flavor. But, it still turned out delicious!

Total Servings: 8-10 Total Cost:$5.50

6 Eggs-Lightly Beaten
6 Slices of White Bread-Cubed
1 Cup Shredded Sharp Cheddar Cheese
3/4 Cup Mozzarella or Italian Blend Cheese
1lb Sausage (Jimmy Dean Maple)-Browned & Crumbled
2 Cups of Half and Half
1 tsp Dry Mustard
Salt & Pepper to taste

  • Mix all ingredients in a large bowl
  • Pour into greased 9X13 Dish
  • Put into refrigerator overnight
  • Bake the next day
  • At 350 degrees for 45 minutes
  • Reheat 1 minute in Microwave to warm up
