Homemade Baked Fishsticks

I have been wanting to make homemade fish sticks for my toddler and wish that
I got around to it sooner. She loved them! She loves fish and I usually bake it with just lemon. I wanted to make her some kind of healthy, fish stick version, that she could pick up with her fingers. She had one...and kept asking for more!

I actually had it in my mind to use Cod. I knew Cod was a white, flaky fish that did not have a fishy taste. But, when I got to Publix, they were all out of Cod, but had fresh Tilapia and it was on sale for $5.99lb. I bought 1/2lb and it made 25 fishsticks. Now that is a deal for $2.78! Just double the recipe for more.

Tilapia actually I think worked out better then the Cod would have. It is a firmer fish, so it stayed together well, and has a nice sweet taste.

This is a simple recipe that you could actually use for chicken tenders or nuggets also. It would even make a great breading for a fillet of fish for adults. If you are one that is scared to cook fish at home...this is a good recipe to start with.

If you have never used Panko bread crumbs, they are light, inexpensive, and delicious. You can find them in the oriental section at your grocery store, usually in a black bag. After using these, you will never go back to regular bread crumbs again.

Ingredients:

1/2 lb Fresh Tilapia Filet
1 Egg
1 Cup Panko Bread Crumbs
1/2 tsp Garlic Powder
1/2 tsp Seasoned Salt
2 Tbsp Olive Oil

  • Preheat oven to 425°
  • Place 2 Tbsp of olive oil onto cookie sheet coating bottom completely (I used Pampered Chef deep dish baker)
  • Crack egg onto a plate and beat
  • Place breadcrumbs, garlic powder, and seasoned salt on another plate, mix
  • Cut fish into rectangular slices about 1 1/2" long into thin strips
  • Place fish into egg, toss coating them completely
  • Place fish one by one into breadcrumbs, coating all sides
  • Then place the fish onto cookie sheet
  • Bake for 15 minutes, then flip them over with fork
  • Bake another 15 minutes until golden brown

  3. I JUST MADE THESE. AND THEY ARE FREAKING DELICIOUS.THANK YOU FROM THE BOTTOM OF MY STOMACH.the panko makes it nice and crunching-WHO NEEDS DEEP FRYING?!
